Having worked in the restaurant industry for many years as a manager, I know that this is a direct violation of health department procedures on this. You never do that because it leave the bacteria on your sleeve. You sneeze into your hands so you can wash the bacteria away, immediately. If I or my crew had done this in front of guest or the health dept how long do you think we would have stayed open.
