My grandmother (rip) who was born in Durango, Dgo Mexico and lived most of her life in Guadalajara would carmelize the onions and garlic first . then she would add the sauce and add cilantro. at the end instead of cinnamon she would add 1 clove for 45 seconds then remove it. I have used this sauce on baked salmon with a roasted poblano pepper and the sauce (grandma called it Salsa Española) smothering fish and poblano pepper. That's a variation to this sauce.

This chef looks and sounds like he knows what he is doing, unfortunately not all of his knowladge gets passed on. I have to eat sodexo food daily @ RPI, and they advertise these fantastic chefs and new exiting foods, but they don't season, there's no kick, no flavor, its like they are avoiding a lawsuit for spiciness. its depressing really. Some of this passion needs to pass on.
