Thumb - Turn Engine Cut-Off to Off
Key - Turn Ignition to Off
Valve - Turn off Fuel Valve
The MSF's stresses over this procedure, especially the "THUMB" part because in case of an emergency, you'd want to turn the engine off as quickly as possible. Getting in the habit of turning the Engine Cut Off switch off instead of just the ignition key may help save a life in the long run. Simply because distance from thumb to engine cut off is much shorter than hand to ignition.

Nothing really, I believe it's okay to leave it on. The video just shows the MSF's procedures visually for those who isn't familiar with motorcycles yet and plan on taking the MSF course. Kind of gives them a head start.
