@thelidiots99 try to use mirrin or dashi. I have seen that float around in different recepies. But like other said get a good Japanese beef. It is very pricey but in Japan beef is only eaten weekly at most but savored because of the price of beef in Japan is really high.

Thanks for the tip. I'll consider that, but that's not what I meant. The ones I eat at restaurants are...well.... salty, yet, a bit sweet. It could be the meat, but do you think they add another ingredient to that?
