    Dont you know Chips can take a fair mount of heat when soldering to the PCB.

    Fluxes & pastes would not be designed to melt at thoses temperatures if the Chip could not take it.

    The stuff he's using is solder paste. It's (as the name suggests) a paste of little beads of solder suspended in flux. You can buy it in tubs or syringes - tubs are for using stencils whereas syringes are used for placing dabs on the pads.

    So, you put a tiny blob on each pad you want to solder, put the component on top (it's handy because it'll stick to the paste) and then you use hot air to melt the paste.

    That's a rough intro, plenty of tutorials on YouTube.
