【材料】:蝦仁12兩、荸薺4粒、油條1條、生菜10片、蔥末2大匙、薑末1小匙、蛋白1/2個、太白粉一大匙、酒1/2小匙、鹽1/3小匙、麻油1/4小匙、胡椒粉1/­6小匙、王子麵(兩包)
【做法】:
1、把生菜用剪刀稍稍修剪後,放入冰水裡冰鎮以保持脆度。
2、把油條切成小塊,荸薺拍碎後剁細,蔥切成蔥花、薑切末,放置一旁備用。
3、用菜刀輕拍蝦仁後,先直切成小塊後,再橫切幾下,加入半顆蛋白、鹽、酒、太白粉、胡椒粉、蔥和薑片攪拌一下後,先把薑和蔥片取出、可放入冰箱中吸取多餘水份。
4、把酒、麻油、鹽、胡椒粉,攪拌均勻成調味料備用。
5、起一油鍋,蝦仁下鍋前再加少許沙拉油、使蝦仁嫩滑後,下油鍋炸、炸熟後撈起瀝油。
6、油條放入鍋中油炸,炸至酥脆後,撈起捏碎和王子麵拌在一起。
7、起熱鍋加入少許油,把蔥末、薑末和剛炸好的蝦仁放下炒,再把剛調好的調味料,倒入拌炒均後,撒上蔥花稍微拌炒即可起鍋。
8、再把炒好的蝦仁餡料,均勻倒在油條和王子麵上,即完成生菜蝦鬆。
