The problem was the upper management came in and started making changes, to the menu and the food. Bringing in frozen instead of fresh, and went away from the mission statement of making the food from scratch.
This chain had no business going out of business. The chicken and biscuits and chocolate cake were only two of the reasons this was a great place to dine out. If they had located in Wisconsin, they'd still be going strong.
I have so many good memories of Bill Knapp's. We always had our birthday dinners and big family get togethers at the Beavercreek, OH location. Gone but not forgotten.
I used to work at Bill Knapps in Illinois. They built 5 in Illinois in the early 80's, but they all closed by the early 90's. I worked between three of the Illinois restaurants between 1985 to 1990 when they closed the Lisle/Naperville location. Very sad, I loved that place! The food was great, the team was even greater.
I worked in a Bill Knapp's in Ann Arbor from 1992-1998 and then transferred to the Worthington store and stayed there from 1998-2000, then when they built Pickerington store they took half our staff and half our business and were only open for about a year, 7 million dollars to build that store and it was all a waste, go figure.
