I also have a Fairwind and have noticed your yacht turns into wind excessively when the wind gusts. My yacht also did this but if the mast is moved to the forward position and leaned forward of vertical, the problem goes away. It now sails lovely.

You need more weight in the keel. Also, you may consider making a larger rudder to compensate the broaching. I find the stock rudder is way to small.
