  • Sure, as long as it is white and flakey. I would not cook tune or salmon, but it is great with cod.

  • I put some big catfish fillets on my wood smoker grill along with some whole mild red and yellow peppers. The sweet variety that didnt have as much heat. I put them in there with some country style ribs. basically baby roasts about 2 inches thick. I used McCormicks Montreal Chicken seasoning mix on everything. Worked out out great. Leave the fish in there until you think it has enough smoke. I took it out after 30 minutes

  • the trick to marinating or like this in buttermilk, catfish with buttermilk always, to pat dry off the fish and once added to whatever liquid it needs to bathe in, freeze it till JUST solid. let it defrost for like 10 mins, itll be easy because its basically just hit 32 when you froze it so all warming is immediately latent heat. repeat freezing step and defrost until just a little under room temp.
