Set the dial to M (manual).

In the menus assign the AE-L/AF-L button to AE-L (hold).

Point the camera at your scene.

Set ISO, aperture and speed BEFORE going into live view.

Adjust your shutter/aperture/ISO until the exposure meter needle inside the viewer reads where you want it to .

Press the AE-L button.

Engage live view.

Give the camera a second or two to think and lock the settings you've dialled in pre-live view.

Shoot your scene.

It's a faff, but it works.

p.s. if White Balance is set to Auto the camera may alter the White Balance (and thus the colours) during your shot, so it's a good idea to run a fixed White Balance setting (Daylight, Shade etc) rather than Auto.
