cools the end of the metal down a bit so it's easier to hold with his gloved hand, otherwise you need to use tongs to hold it so you don't get burned through the glove.

Regardless of your personal views of specific techniques, it is videos like this that take some of the intimidating mystery out of the ancient skills. I applaud these videos, even when I disagree with some of the specifics. So thank you for making and posting.
