You first need a college degree. Most pilots attend the Air Force Academy or ROTC in college. During this time, you compete for a pilot slot. After graduation, you will attend Pilot Training which is a year long. During that time, you compete to see who gets which aircraft. If you get the C-17, you then spend 4 months learning how to fly it. Another option is to visit a guard/reserve unit if you already have a college degree & see if they will send you to pilot training.

c-17...one plane where a good pilot makes A/R moderately challenging, to a bad pilot making it just a downright PITA

I was deployed flying the C-17. The KC-135 Air National Guard Unit was also deployed supporting OIF. Since the KC-135 guys worked in the same building as us, I just walked over and asked if I could take a ride and see what it was like from the other side.
