Thanks everyone for watching. After these bars were TOTALLY cool they were easier to cut and take out of that tin. I do feel if I had baked it in my regular baking pan it would have baked more evenly. DO NOT BAKE this in that kind of baking tin. Use your own pans to bake this in. The crust took 15 minutes to bake and when I added the filling I baked it for 35 more minutes. The bars are SO RICH you can only eat a small piece! When I first tasted these bars I was disappointed. After they cooled off REALLY well I took a bite of them again and the flavor was much better. I'm not totally disappointed in them like I was when they were warm. Last year I did sprinkle some cinnamon into the filling while mixing it. I was so frustrated about going to the store for corn syrup I forgot to do that. I believe the cinnamon really adds to the flavor of this bar. Thanks again for watching.

PECAN BARS

PECAN BAR BASE-
1 pkg. yellow cake mix, reserve 2/3 cup for filling
1/2 cup butter or margarine, melted
1 egg

FILLING-
2/3 cup cake mix
1/2 cup brown sugar, packed
1 1/2 cup dark corn syrup
3 eggs
1 cup chopped pecans
1/2 teaspoon of cinnamon ( I forgot to add this )

DIRECTIONS-
Combine dry cake mix in large mixing bowl with melted butter and 1 egg. Mix well. It will be a thick batter. Press mixture into generously greased (bottom and sides) 13 x 9 inch baking pan. Bake in a 350 degree oven for 15 to 20 minutes until light golden brown.

Meanwhile, prepare filling. Combine all filling ingredients in large mixing bowl. Beat at medium speed for 1 to 2 minutes. When the pecan bar base has baked for 15-20 minutes, remove from oven and pour filling over partially baked crust. Sprinkle with pecans. Return pan to oven. Bake for 30 to 35 minutes longer until filling is set.

  • pecans are about my favorite thing to eat! They looks great. You did a fine job averting the possible corn syrup disaster, ;) So many pecans! And I'd add cinnamon, too.

Glad you are videoing from the holler still.....waving out to you and James from across the water. I'll have to scout around for the cake mix (I've not seen Duncan Hines cake mixes over here).....what is the packet weight of your cake mix Melissa? It would give me some guidance when buying an alternative brand here in the UK. Happy baking.
