    i saw this on wiki

    In Esfahan, honey is added to Sohan to substitute sugar producing a more brittle toffee which also has a shinier finish to that of the Sohan of Qom.

  • 2-in another sauce pan..put together water, sugar, honey, glucose, rose water together and cook on high heat until you reach the hard crack stage (30-310) degrees

    3-add the butter mixture to the sugar mixture and add the saffron and cardamom.

    4- keep stirring the mixture for a bit more "around 3 mins" and pour on your greased tray and garnish..

  • so I finally got it right after adjusting the method a bit.. here is what you do.. 2 tbs whole wheat flour 1 tbs all purpose flour 210g (1 cup) sugar 140g butter 1/4 c honey 1/4 c corn syrup 1/2 c rose water 1/2 tsp saffron 1/2 tsp ground cardamom Method: 1- brown together the two kinds of flour for around 2 to 3 minutes. add the butter and combine well.
  • can someone adjust this recipe please? It comes out chewy as toffee.. not brittle like crunchy as sohan should be!
