The butter on the toast is not vegan--why put buttered toasted into the vegan lentils at the end? The toasted could have been olive oil and herbs.

Oh, this looks soooo good. I'm trying this at the weekend. I think my guyz will love it. They love anything soupish w/ beans or lentils. We're not vegan, so I will probably use some ham stock I have in the freezer. Either way, it will be a winner in this house, I think. :-)
