Mais conhecida como bottarga, as ovas de tainha levam o nome de karasumi na cozinha japonesa. No restaurante Kinoshita, do chef Tsuyoshi Murakami, elas vêm servidas junto a finas fatias de nabo e um toque de pimenta e de azeite.
