Now that you've mastered rabbit butchering, Chef Sean Rembold of Marlow & Sons moves on to the lip-smacking portion of this series with his own special recipe for rabbit cacciatore - a classic Italian dish paired with creamy polenta. This is truly a "wow your friends" kind of meal with tons of hearty flavor to bring out the best in the rabbit meat. And, remember, although we did film this in one day's time, it's best to let the cacciatore rest overnight so you can skim the fat and let the flavors really penetrate into the meat. Thanks for watching food. curated Hope you try the recipe at home, or go out to Brooklyn to visit Marlow & Sons to taste the dish yourself! http://www.marlowandsons.comShot & Edited by Storyteller: Liza de GuiaFollow my food obsessions on Twitter: SkeeterNYCHappy eating!http://www.foodcurated.com

  • Should you chill the rabbit overnight before you cook or can you cook it right after you clean it

  • after he said 'you could use milk and rabbit stock, that would be delicious...' he looked kind of sad and i wanted to give him a hug through the screen :(.

  • @foodcurated or you can shoot one in your backyard

  • @Apvatar3000 imagine a mix between lamb and chicken. very tender, yet very moist and dark meat

  • in my country, we add mushrooms and little white pickled onions in the braising jus. as well as a touch of brown beer.

  • Damn this makes me look at my daughters pet rabbit in a whole new light... mmmmmm, rabbit!

  • Love American pronunciation. They could make the most beautiful words sound like shit. "Catch-ya-tor-ee"

  • u ruined it with all thast junk wine eat that rabbit braised

  • Hey Sean, really enjoyed the video! Question - Do you recommend any type of pre-brining for wild rabbit that i've hunted. I imagine coming from a farmer the rabbits you use have a diet that is more controlled and therefore there is no gamey taste like with wild rabbit. Looking forward to hearing your response. Thanks! Mark

  • my mouth is watering!!!
