@nardo218 I make a lot of substitutions when I'm cooking, too. I know stock comes from bones and broth from meat. But when a recipe calls for stock I generally use the store-bought broth. At $0.99 a can, it's most affordable. Fancy wines? Cooking wines will do. Food from a can? Gleaned veggies from the local farmer's market. Cake flour? All-purpose. It's a toss-up between what's cheapest and what's most available. That's what I like about cooking; it allows the innovative cook to improvise.

I almost bought some cube steak today, but I didn't know what to do with it. I thought it would be hard. But i can do this! Confession: I deglaze my pan with chicken bullion, sorry Alton, I don't use chicken stock enough to keep it around. Also, I don't have a dutch oven, so I'd do this in a frying pan and then decant into a casserole to bake.

Righteously put in both remarks. It depends on your philosophy and how essential the uni-tasker is.
I think though, that AB's biggest gripe with some uni-taskers is not only just function, but cost. He doesn't like rice cookers as cooking in a pot is just as easy (function) and the cost is somewhat high (cost). Same with that fine wire mesh strainer in season one--quite costly and the function is easy to duplicate.
Can opener? Hard to duplicate, and the cost is low, not worth an argument. ;)
