Love sauerkraut with pork loin. I bash up a good amount of caraway seed in a mortar and pestle. The caraway seeds, still more or less intact, but bruised are tossed into the kraut and there left to soak up and spread the flavor. UNBELIEVABLY good. You'll love it.
