材料(10杯):
牛奶A1000g、奶油125g、香草豆莢1根、蛋白1000g、砂糖A250g、蛋黃12顆、玉米粉125g、牛奶B250g、砂糖B300g、糖粉適量

做法:先把香草豆莢剖開把仔取出與牛奶A、奶油一起倒入鍋中開小火煮,再把砂糖A、蛋黃、牛奶B、玉米粉一起倒入調理盆中攪拌,等鍋子燒開後把攪拌好的材料倒入鍋中持續攪­拌,直到呈現濃稠狀即可關火,即為蛋奶醬。
蛋白用攪拌機用中速打發至無液體狀且有泡泡狀,之後加入1/3砂糖B再打發讓泡泡細緻化後,再加1/3砂糖B呈現濕性發泡後,最後到入最後的砂糖B呈現乾性發泡即可完成,­先把打好的蛋白先取一部分到鍋子中攪拌均勻(1000g蛋白約搭配1500g的蛋奶醬),攪拌後再一起倒回調裡盆中攪拌均勻。
在杯子內抹奶油後在杯沿沾上糖,把攪拌完成的蛋糊裝入杯子中,放上烤盤中,烤盤裡加水送入烤箱溫度200度烤25分鐘,完成後可在舒芙蕾上灑上糖粉,這樣就完成好吃的點心­舒芙蕾
