I always get beets at the salad bars, but I never thought of just having a beet salad. This looks really good, as is true everything on your channel. I am going to add you to my favorites list so as to find your recipes easily.

This is a good looking recipe. We wear the cheap vinyl gloves from costco when we work with beets or pomegranite. Works out to about 14 cents a pair -and you don't have red fingernails!!!

@soofunnny : You can use a fine shredder or we have a food processor that does fine shred and we used that ;)

are the beets raw? i've never tred raw beetroot. cant really imagine eating them uncooked

I love beets, try my version of this salad by adding olive oil, instead of cilantro I use fresh dill and parsley, walnuts instead of peanuts, fresh lemon juice and I chopp my beets, sometimes I add chopped hard boiled eggs if I want to make it into a hearty salad. try my version, let me know how you like it, you will not be disappointed.
