@pyogen Im very well aware that this is not evaporation. the water particles separate in the blistering cold, and freeze instantly into small almost microscopic icicles giving the illusion that the water evaporates into a gas. For the convenience of things, i called it evaporation.

That's both evaporation and condensation. The hot water from the pot is evaporating, then the cold air is squeezing the moisture right back out of the air. The visible moisture is condensation, the opposite of evaporation.
