Hello!
I'm really excited that you've had a go at Profiteroles! Good on you! I'm going to try it myself tomorrow (I hope :P).
Just a quick little tip: the reason your Chocolate didn't work is because it "seized". (It's happened to me a few times- bit embarrassing-because once I was showing off :P) it happens when you add cold things (like cream) to warm choc or steam/water gets in the choc or it comes in direct contact with heat. Make sure your utensils are super dry helps too

Yeah when you're trying to take the batter off the mixers it would be easier to remove the mixers from the motor. =)
