HOla! estoy muy de acuerdo con tu definición de cocina, yo tambien creo que no es algo matemático ni es una ciencia exacta, es algo para lo que hay que tener un gusto y una educación.
Yo tambien soy cocinero, en Madrid y aunque estoy empezando en esto de la cocina, me parece que muchos chefs Españoles están tomando un camino equivocado al hacer una cocina, que ocasiones, conecta poco con la realidad.
