Thanks for posting. I cook on a primo, but I picked up an 18" WSM on craigs used twice for $100. I'm in charge of the brisket for our team in an upcoming competition and would rather not lug my ceramic around. Will definitely try the WSM and use your tip.

@dubbski25 Yes... its a large can... about 6-7" diameter across the top...

Thanks.. in this video, the charcoal basket is not 'full'. You can really load it up and cook for 14-16 hours without having to add charcoal. Another trick for low and slow is to fill that #10 can half full with unlit charcoal and then fill the top half only with lit coals. That is the strategy I take on long cooks...
