【材料】:排骨1斤、鳳梨罐頭1罐、小蘇打粉1/2小匙、熟白芝麻1小匙、雞蛋1顆、香蒜粉1/4小匙、香菇精1/2小匙、鹽少許、太白粉2大匙、麵粉1大匙、柳丁汁6大­匙、白醋1大匙、檸檬1/6顆
【做法】:
1、排骨1斤加入1斤的水與小蘇打粉泡30分鐘,然後走水1小時,撈起瀝水。
2、排骨加入蛋液、香蒜粉、香菇精、鹽,抓馬片刻;
3、加入太白粉和麵粉拌勻,放入冰箱冷藏20至30分鐘。
4、將盤子用大黃瓜與柳丁、小番茄盤飾,罐頭鳳梨打底。
5、備160度油鍋,小火,排骨用油泡5至8分鐘;
6、再開大火5分鐘逼油,排骨炸至熟透撈起瀝油。
7、鍋中加入一點油,入橙汁、鹽、醋調味煮滾;
8、加入炸熟的排骨,拌勻;
9、起鍋前淋上檸檬汁,盛盤灑上熟白芝麻,即完成「橙汁排骨」。
