Lamington Cookies are a twist on an Australian classic. Chocolate is melted and combined with butter, coconut and flour and formed into nugget-shaped cookies. Rolled in coconut for that authentic Lamington taste, these little babies will be loved by all. Give it a go!

RECIPE FACT SHEET

INGREDIENTS IN THIS DISH:

125g Unsalted Butter
150g Dark Chocolate
1/4 Cup of Brown Sugar
1 Egg (Lightly Beaten)
1 1/2 Cups of Plain Flour
1/2 Teaspoon Baking Powder
1/2 Cup of Desiccated Coconut (plus extra for coating)

Makes about 30

Preparation Time: 10 minutes
Cooking Time: 15 minutes


ALL MEASUREMENTS GIVEN ARE AUSTRALIAN STANDARD METRIC
(Look up Google for a conversion chart if using Imperial)

  • that brown sugar was pretty solid; is it real sugar, as in SUGAR or like sugar as in its something else but its just the name??

  • @SuperEmilyy24 It's brown sugar. It's made from less processed sugar and molasses, thats why it's thick ;)

  • @mukwah1111 I've never frozen them before. They store well in an airtight container for up to a week.

  • i just noticed, normally woulden't you use self-rising flour instead of baking powder? just wondering ;)

  • @teencooking1 Normally I would use self-raising flour, but it's not universally available, and I end up getting people asking 100s of questions about where to find it. Just easier to do it this way in the long run ;)
