I put on my Harry Potter T-Shirt and conjured up this spice-reduced formula for shawarma.

Sauce: Tzatziki - Greek Yogurt Garlic Cucumber Sauce

1-2 cups Greek yogurt
1 clove garlic fresh
2 TB good olive extra-virgin oil
1/2 of a whole cucumber fresh -- peeled, seeded and diced, or finely chopped.
A few black greek olives for garnish (optional).
Put the yogurt in a bowl.
Put the garlic through a garlic press
Mix the ingredients with a mixer (or a fork) and slowly add the oil in small increments, as if making mayonnaise.
Mix in the cucumber

Meat:
1 lb lamb meat (ground)
4 small garlic cloves (pressed through garlic press)
2-3 tsps garlic, minced
White onion, about 3 TB (minced)
1-2 tsp kosher salt
3/4 tsp black pepper
2 tsp dried oregano

Blend everything.
Place into a mold, such as a bread loaf pan.
Apply a lot of pressure. Like put a second pan on top and stepping in it.
Remove from mold (You can immediately go to following step or marinate overnight. I actually prefer using immediately, which I did not do this time.)

Sear on both sides, then cook to desired doneness in lower heat pan or oven. Or cook to desired doneness in oven and finish with torch or by pan searing.

  • I posted a nice comment while I was watching your video. After 4.28 I deleted it, You were just showing off.. (hey guys,, these spices are expensive, but I'm rich and I have all of them in my cupboard). I'm not writing this for you, I'm just reminding myself not do this mistake ever. Thanks

  • @civet20009 Thank you for your comment. I'm sorry you got the impression I was showing off. I sometimes forget that my videos will be seen by people who aren't familiar with my sense of humor. I rewatched the video again and I can see how you got that impression. I will be more careful in the future. Thanks again for pointing out my humor-fail. Marc P

  • That looked pretty good. Almost like a fajita! Seems like a lot of work though. When I cook, I want things ready in an hour or less! LOL That pop (blooper) made me giggle! Love it when you cook.. xoxo

  • @mysteryglo I went out of town on Saturday and came home Sunday. A short time after I got back, I discovered what that pop was. Now that I know, it's hard to believe it wasn't even louder.

  • @P1X1E56 Oh god! It was worse than I thought. A patio door window shattered for no apparent reason. It was the inside glass, not the outside, so I have no idea what caused it. I didn't even know until the next day when I pulled back the blinds.
