This is a 3 tier simple white wedding cake for my friend Dani's niece. The cake was only supposed to serve 80 but I made it WAY BIGGER! This cake was not covered in fondant. The bride requested all buttercream. It was a HUGE challenge because I struggled to get the buttercream as smooth as possible. The bottom tier was chocolate, the middle tier red velvet, and the top tier was lemon. Yummy combo! The buttercream icing was all vanilla. I airbrushed the cake white and then airbrushed it again using Pearl Shimmer. The pearl borders were all piped using royal icing. This sucker was heavy but it was lovely and surely delicious! :) I wasn't crazy about the flowers on top of the cake but I guess it was allright! :)

  • Thanks! I usually buy Satin Ice fondant. It's the best tasting one I've tried thus far. :0)

  • To be honest with you, I'm not sure as I've only made homemade MMF once and I didn't store it. I used it immediately. I don't knowhow to make gel icing for piping. LOL! Sorry I couldn't be of any help. :)

  • hi there again just want to ask how long will be an MMF be usufull if i will stock a bunch of MMF?....and do you know how to make a gel icing for piping?thanx...

  • HI James, There are MANY brands of compressors. You don't need a large one. As long as it has AT LEAST 30 psi you should be ok. They all do the same job so don't buy the hype that some are really better than others. You can purchase a small table mount one (like airmaster or kopykake) or a larger one that has wheels & stands on the ground. I've always used large ones but only cuz they've been hand me downs from my Dad. MMF=marshmallow fondant. :)
