Keith's Caribbean Style Rice and Peas:

Make sure to order my seasonings at www.keithlorren.com!!! Its the best!! I invented Cooking!!!!

1 large onion
2 bunches of scallions
1 tablespoon grated fresh ginger
6-7 garlic cloves
2 tablespoons Keith's complete seasoning blend (purchase at www.keithlorren.com)
2 teaspoons black pepper
6 strips of smoked bacon
2-3 tablespoons fresh thyme
2 teaspoons whole allspice berries
12 oz washed and soaked red kidney beans
1 un-opened scotch bonnet pepper (optional), (be careful not to puncture this pepper or the rice will be ruined. If it remains un-opened it will give off an amazing flavor without the heat.)
2-3 tablespoons brown sugar
4 cups coconut milk
3 cups chicken broth or water
1/2 teaspoon coconut extract
3 cups parboiled rice
about 4 cups of water
5 tablespoons butter
2 tablespoons olive oil
salt to taste


Directions:

1) Dice onions, scallions, garlic, ginger, complete seasoning, black pepper in food processor to make seasoning paste

2) In a large pot, add 2 tablespoons of olive oil, and saute bacon until crispy over medium heat.

3) Add seasoning paste and saute until flagrant and translucent, about 5 minutes.

4) Add beans, coconut milk, thyme, chicken broth, whole scotch bonnet pepper, and cook beans until tender about 1.5 hours.

5) When beans are tender and liquid has reduced to about 2 cups, remove scotch bonnet pepper and discard. Add rice and water. taste/ adjust flavor with salt/ sugar. Cover pot with a tight fitting lid and simmer on low heat for about 20 minutes or until rice is fluffy.

Serve with everything!!!

  • I'm part Cuban I did the recipe Keith and we love the extra coconut flavour if I can't taste the nutty flavour and the spice with shelly fluffy rice it aint rice and peas and that lil sugar to bind it all mmm ohhh man. I even lik the bacon in my ackee n saltfish whooo

  • Well I loved it but I have 5 kids a husband 3 dogs and a day job, I gotta cook quick this takes way to much time. I tried it but the kids were like when it's ready! So I think I need to soak the beans before leaving to work that may cut some time down next time but great recipe.

  • @Mackiemoomoo the traditional way is to add salted pigs tail,or salt beef(cured beef navel)..this dish traditionally was a one pot meal..at Christmas time ham skin and pieces was used,also instead of red peas we used gungo peas(pigeon peas)...so using bacon is the modern (more convenient) way of getting the smoky/salty flavor to the dish
