Chocolate Mud Cake with Chocolate Ganache
- 250gr unsalted butter
- 200gr dark chocolate
- 2 cups castor sugar
- 125gr plain flour, sifted
- 60gr self-raising, sifted
- ¼ cup cocoa powder, sifted
- 2 eggs
Method:
Preheat oven to 140°C
Melt the butter and chocolate together over simmering water.
Add the sugar and 1 & 1/4 cups hot water and heat until sugar dissolves and mixture is well combined.
Stir in combined flours and cocoa and then beat in eggs.
Pour into a greased individual moulds (dariole moulds) and bake in a water bath in an oven set at 140C for approx 1 hr.
Stand in moulds for 15-20 mins before turning out on a plate to cool.
Chocolate Ganache:
- 100gr dark chocolate, chopped
- 4 tablespoons cream
Heat the cream in a saucepan until just simmering, remove from heat. Place the chopped chocolate into the hot cream and allow to stand till melted.
Stir until glossy and well combined.

what a fool ... white chocolate (at least in its original version) IS chocolate, as it's been made with COCOA butter. Sadly someone markets ''white chocolate'' which is made from vegetable oil instead of cocoa butter. you can figure it out if you check the declaration.
