@gasdorf at the local ice plant..most towns have an ice manufacturing plant.. Look in yellow pages. I used to buy dry ice at Halloween for parties

@Christopher711 One: How do you know the buckets are food grade? See my above comments on food grade. Two: what was in them before? Plastic is porous and anything, especially liquids, will leach into the pores and then out into your food.
You can't get all of a noxious chemical out of those pores even with bleach and soap.
Best to get food grade buckets with a known previous use.

Yeah, the buckets do need to be food grade. Not all buckets bearing a 2 in the triangle are food grade either. That just indicates the recycle number; not the release agent used. The release agents in non FDA approved buckets are toxic and will contaminate food even if it is in a hermetically sealed mylar bag(takes longer in mylar but I would not chance it on my family). The dry ice/o2 sublimation process works OK but not with the bucket(specifically the lid) you used for the video.

cooling the container could allow moisture to condense on the now-colder surface of the inside of the bucket. Drip any water as you remove your water/ice bath, and you have also allowed moisture in the bucket. Moisture is the enemy of any dry canning process. Your foods will develop molds. In addition, that bucket style you are using is crap. It will leak air. Use Mylar bags with oxygen absorbers. Use the bucket strictly to protect the Mylar bag and to make the whole thing rodent proof
very cool with dry ice ....where do you buy dry ice?

I bought it @ albertsons but u could look at any stores that sell food or bulk ice u might need to ask it's not very expensive around my neck of the woods

@permofit can you get dry ice in the freezer ...or does it have to be a specail freezer ?

@gasdorf sorry for the long wait but the ice in freezer is frozen water and dryice is frozen carbondioxide so in needs to be from a supplyer who sells it.
