Edible flowers are some of my favorite things to use in my cuisine. In this video I show you how to make a traditional Italian dish, stuffed squash flowers. It's a wonderful summertime appetizer I make with shredded mozzarella cheese and basil with a pesto dip on the side. A flavorful original mozzarella stick you really should try at home.   • Olive oil is not good for deep frying as it burns at high temps and the delicate flavor of the oil is changed also. Those flowers were also picked at the height of the day when they were all dieing off and are closed and wilty. The flowers should only be picked in the morning when they are open, less fragile, and at the height of freshness. Plus, bugs af all sorts sit inside these flowers and many times die in there or get trapped when the flower closes, they cannot be properly cleaned then.

  • You are absolutely right! Olive oil should NEVER be used at high temperatures. It ruins it.
