After puting the toilet in place I use Plaster of paris for a classy looking job. Plus it's much easier then shiming which are easy to move while placing or rocking the toilet in place. It's only about $2.00 a job.

Shims - little pieces of wood or I guess you could use pieces of plastic or metal might be better
