I have cooked at least 3 of your recipes, this one will be the 4th, although I will not be making the sandwich, because in my country we eat the pork differently, in something called "gallos".

Started my pork shoulder last night at 6pm and this morning at 6am took it out. Absolutely amazing, great recipe, thanks!!
i like this guy so much, all thou i hate him also, because im generally on the internet around 3 am, and i get so hungry, i wish i could hire john to make 3 am snacks

I add my dark sugar to my rub.. that way i can work it all in together.
and i always let it sit int he fridge for 24 hours or at the very lest 12 hours
before smoking.. the deeper it gets into the meat the better
