To make easy homemade applesauce:

If you don't already own a Foley food mill, you can find one at Laura's Last Ditch (http://www.LaurasLastDitch.Etsy.com)

Quarter apples (you can also throw in peels and cores leftover from other projects that required apples).

Place in pressure cooker or standard pot, along with a small amount of water. Cover. Turn down heat to a simmer once it starts boiling.

Cook until soft.

Place the cooked apples into a Foley food mill situated over a large bowl or pot.

Turn the crank, reversing directions occasionally, until you are left with just the skins, seeds, and stems.

Add cinnamon and / or sugar to taste, if desired.

The applesauce will take on a darker, or pinkish hue from being cooked with the skins. Stir applesauce to homogenize.

Be happy you didn't need to peel and core all those apples.

The Foley food mill is also good for removing skins and seeds from tomatoes for making tomato sauce, and for pureeing pumpkin, or making baby food.
