You said the butter is optional..In fact it's the butter that makes a sort of gravy and keeps it moist.
According to a program I watched tonight about a bakers in Cornwall, they use clotted cream inside to make it moist.

Looks good to me man! I have never even had one but it looks fine and tasty to me dude!
I am definitely a member of the "Rustic Club" but the end result and flavor is what matters most.
