Just because the dough doesn't tear doesn't mean it is going to taste good. I'm not saying it doesn't but those dough's are made with a low hydration which is why they can be tossed easy like that. The lower the hydration is because it is easy to train people on it without the tearing of the skin. But not to take away from the video you are good man. My dough is of the same strength but its a hydration of 63.3% most of you probably don't know what I am talking about but he most likely does.

I think you are wrong. The dough you see at the video was for a customer whom order pizza. I was just making the order and I decide to film my self. But you can believe what you want
