Hi, thank you very much for your recipe. I have tried following it but i find my mascarpone mixture is alot more runnier than yours. Why do you think that is??

i also wash the eggshell. things that should be done !! chicken sit on them and dirt can be on it...

My compliments Jessica, this is the original tiramisu recipe from Treviso. The recent version is different, yolks are whisked with hot sugar syrup like in a 'pate a bomb' and whites are substituted by whip cream. Also, grated 70% chocolate is used instead of cocoa powder. This recipe makes it suitable for everyone, even pregnant women, and can be served in restaurants where raw eggs are obviously banned. Of course we make the 'savoiardi' from scratch ^__^

she really said wash ur eggs. omg... wth. u dont need to wash them. cause u only use the stuff thats inside. Who says that u need to wash them?... funny.^^

the surface of the eggshell still has some bacteria on it, even after they have been 'cleaned' before packaging. when you break the egg, the contents of the egg will come into contact with the eggshell and therefore the bacteria. Because the eggs are not cooked in this recipe (so won't be killing off all the nastiness), the only way to prevent adding bacteria to the list of ingredients of tiramisu (and potentially making your guests rather ill!) is to wash your eggs before you use them :-)

some recipes use whipping cream instead of the egg whites... any difference in the final taste or texture?

What the eggwhites do is lighten up the mascarpone by adding air bubbles and make it less dense. If you add cream to the mascarpone (which is in fact triple cream itself) even if it is whipped, it will make the cream quite heavy and you fill find it harder to have second helpings :-) same thing happens if you add your liquor to the cream rather than the coffee, and if you don't whip your egg yolks enough until they're frothy. Hope this helps :-)
