Here's how you can prepare the dried fruits for making traditional Caribbean black cake. Black, fruit or rum cake is made with the addition of several dried fruits which are soaked (marinated) in rum and cherry wine for months, to give it it's unique Caribbean flavor. Here's how we soak or marinate the fruits for Caribbean fruit cake.

  • @5:56 To get every last bit of "mashed" fruits out of your food processor bowl and to make it easier to clean it up afterwards, add the 2 cups of rum to it and process for about 10 seconds.

  • Too bad half of my family are recovering alcoholics and probably shouldn't come anywhere near this cake.

  • My cake came out great this year, my fruit was soaked over a year.

  • This was so interesting, because the recipe & ingredients look so similar to the traditional fruitcake recipe handed down in my family. We too soak all the fruits, usually in a mix of rum & brandy, and once the cake is made, the whole cake itself is soaked in brandy for at least 2 weeks before being sliced & served. Makes me feel ambitious enough to maybe make it this year! :)
