For this simply Thai Red Chicken Curry:
Chop up onion
Chop up spring onions
Chop up peppers
Dice chicken breast
In a cold pan (or bowl) mix vegetable oil and red thai curry paste
Add coconut milk
Taste for the level of spice you want throughout the process and add more curry paste if wanted
Add the vegetables
Crumble your chicken stock tube over the diced chicken and massage it into the meat
Add the chicken to the curry and stir
Bring the heat down to a simmer and cook for 15 to 20 minutes
Check if the chicken is cooked by taking one of the larger pieces out and cutting it in half
You would cook the chicken in the sauce, after the chicken is cooked troughout then add the veggies. You don't want the veggies to disappear and you would stiil keep them crisp. So no cooking the vegetables that long.

Sharpen your knife, FFS. You had to saw through that onion and even the chicken. Also, use a board that doesn't move. That is dangerous.
"I'm keeping my wooden board for ..." So why did you just slap all over it with the hand you were just holding the raw chicken with? As you said, "If you are handling chicken, wash your hands before you touch anything else." Your board is now cross-contaminated.
Duh!
Then you use a cook-in sauce. Come on!

Don't you put the chiken , cook it with the spices ... then add the vegies and after you can put all the sauce ...?? cuz it loooks wierd like that ...
