The trusses are balsa glued together.

To the right of the video, you can see the string is being pulled by a brass hook which is attached to a fish weighing scale. As we pull on the string using the spring scale we read off the force as it increases until it snaps.
Ohh, and how did you make the bridges?? =]

That's awesome! I'm kind of slow, how do you know how many pounds of force it took to break the bridge?
