I'm from Thibodaux,don't live there but a bunch of my family still does.My dad does this weird thing when he cooks his white beans.He heats them up in water drains them.and here is the thing he blows cool air on them with his breath.and the skin or shell of the beans bust off.Then he takes the shells out and recooks them they turn out creamy.

I can't find "Tony's" where I live. What spices could I use to make up my own? Thanks!

Here's the recipe for "Tony's All-Purpose Famous Creole Seasoning" straight from Tony's cookbook -
26-ounce box free flowing salt
1 1/2-ounce ground black pepper
2-ounce ground red pepper
1-ounce pure garlic powder
1-ounce chili powder
Mix well and use like salt. When it's salty enough, it's seasoned to perfection.

I'm from up north and my husband is from Lousiana. So, I literally watch your videos and cook him some good southern food. =) thak yall.
I only have 1 question...
can you give me the ingredients of whats in the Cajun trinity sautee..looks like onions, tomatos and bell peppers.
