I love your video but please cook the eggs with sugar over double boiler until is reach 155 degrees to be safe to eat killing the salmonella if is any in the eggs. Please watch my video where I cook this cream with double boiler. Thanks for your videos!

Id rather prefer to cook the eggs like a custard, then, adding the mascarpone. It is very dangerous to eat raw eggs.
