Looks like your turkey wasn't completely thawed and had some ice crystals remaining inside. When the bird hits the hot oil, these ice crystals rapidly vaporize into steam, and the expansion of the ice/water/steam causes tiny explosions which send the oil bubbling over the top of the fryer and into the flames, spreading the fire. In several other similar videos, the cause was most likely too much oil - it flows smoothly over the top of the fryer before the bird is submerged. Same result.

@llbigwave actually the oil was too hot and we filled the bird with marinade. We did not have a thermometer to check the oil. This was a wild turkey not a frozen butterball. But you are correct about the spontaneous combustion. We also anticipated this and surrounded our fire with asbestos stones.

Actually it was an accident. It was the first time we had ever fried a turkey and we didn't have a thermometer to measure oil temperature. When the cold marinated bird hit that hot oil there was spontaneous combustion. Luckily we were a long way from buildings.
