Oh! So that's how it's done. The first time I made these using a gnocchi board, I thought you simply tried to roll the little gnocchis over it. Didn't achieve deep ridges at all. After cooking, they were not even discernible.
After watching this, NOW I get it. More pressure gets you the ridges and makes it flat so you have a hollow little cylinder to hole more sauce.
