Just try glutenfree for half a year and you`ll see the difference. Didn`t want to insult anyone in the vid about their figure. My fat and bloated belly disappeared within a few weeks after switching to a gluten free diet. Sorry if my spelling is not 100 correct, but I`m swiss and speak a few other languages other than english.

well, if you remove gluten from the "seitan" thing they've made in the video, you in fact removed seitan from it (seitan = gluten = protein) and what is left is starch (carbohydrates) ..

yeah, i agree. What you acheived was not because it was free of gluten, but because it was carb-free. Wheat products are very carb-heavy, usually, but Seitan gets its texture from being starch-free. (you wash and pound the starch out)
