Demonstration of how to debone a whole chicken and prepare the meat to use in two different dishes. The breast meat is sliced for stir-fry and the legs and wings are cut for a steamed dish with black mushrooms and Chinese Sausage ( lop chung). Next clip shows the prep for the individual dishes!!   • Jui, I really enjoyed your video. You showed me a whole new way of deboning that is much easier. I raise my own chicken (I have 50 meaties and 50 layers) and when its time to process them and debone them (for the freezer camp) I don't have all day for one bird. You method will speed things up. Glad I found your video and thanks for posting it.

  • @69Trapperjohn- years ago when I worked in restaurants in Maryland they used whole chickens and we had to debone cases of them, now a lot of places use boneless chicken, but it's still a nice skill to acquire. Go slow at first, especially around the drumstick and thanks for the positive comments!

  • @chyrd - You're welcome! Just remember to go slow at first, depending on your knife skill level. always remember to keep fingers on your other hand away from the blade of the cleaver! A firm grip on the cleaver and a dull knife is more apt to slip then one that is well sharpened! Good luck and thanks for watching!

  • You have impressive knife skills. Just went through 3 chickens trying your technique. I still need more practice but thanks for the tips. I now have a couple of carcasses and bones - I'd be interested in your recipe/tip on how you could use the bones+carcass to make a Ramen noodle soup. Thanks again

  • @henrooo - Sorry , somehow I missed ur message! The bones and carcass are excellent for making stock and also now that the weather is chilly, it is time for Chinese rice soup. In Cantonese it is pronounced Jook. I will post that video soon as it is the perfect way to make a meal with the bones and carcass!
