i love eggplant and this is a fascinating recipe, which i will try it soon. as you say, years of experience are contained in Anna's cooking -- and in the beautiful and patiently prepared food, as well as in her lovely family, her lovely wisdom is also so very wonderfully dispalyed.

Sooo nice to see a different way of doing the classic-stovetop, not baked! And I absolutely LOVE that the eggplant is fried twice. It must be tender beyond belief. I will try this recipe and let You know how it turned out. I hope I can do her justice!
