This ten minute video is worth watching if you want to see the most wonderful woman Anna cook Melanzane alla Parmigiana. Eggplant Parmesan or Aubergine Parmesan - that is what we would know it as.
Anna is Stefano's mother - you can see his tiramisu video online also - and you can see where he learned to cook.

This was one of the most challenging videos we filmed - the sights and smells of the cooking had us weak with hunger looking at it.

  • Sooo nice to see a different way of doing the classic-stovetop, not baked! And I absolutely LOVE that the eggplant is fried twice. It must be tender beyond belief. I will try this recipe and let You know how it turned out. I hope I can do her justice!
