Try using a decent ski like a Fischer Boundless (now called Escort 98, I believe) and some decent boots like Fischer BCX 875. It is otherwise known as lightweight Telemark gear. You can tour, and you can turn.
Forget the wimps who are into grooming and XC tour centers. The beauty of Light Tele is that you can tour, and you can turn, and you can do it anywhere there is snow.
Fischer, Rossignol ,Madshus and Asnes make most of the skis in this category.

Visit a XC facility with grooming, rent some decent gear and you'll get to do all those of the things you say you like so much.
